It's rare for plants to have distinct genders. Technically most of them are hermaphroditic, or able to change genders based on their environment.

Maybe the plant is a They-Thing.

most plants aren't talking to us though, you can be intersex and still identify as a single gender, so he could be a man-thing or a they-thing, or a man and just stuck in a plant body

Sex and gender are also distinct, at least to my nose. Although if he's a plant, would there even be chemical signifiers to detect?
